Christmas Fettuccine

Simple Homemade Pasta Dish to enjoy during the holiday season.

Ingredients
  

  • 2 c 00 flour or all-purpose
  • 3 eggs
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp butter
  • freshly grated Parmesan Cheese
  • freshly cracked pepper
  • red pepper flakes
  • freshly chopped Parsley

Instructions
 

  • Add flour to a large bowl, make a well in the center with your hands or with the backside of a measuring cup.
  • Crack your eggs into the well, add salt and olive oil and begin mixing with your hands until all incorporated. Knead for 5-10 minutes by hand. The dough will come together, just stay with it. If the dough still ends up feeling too dry, add water 1 teaspoon at a time until the dough feels soft and smooth.
  • Form into a ball and wrap in plastic wrap and set aside for 30 minutes.
  • Divide the dough into 4 sections.
  • Add flour to a clean surface and begin rolling out each section to 1/4” thickness. Add flour to both sides of the dough to keep from sticking to the pasta roller.
  • Using your pasta roller attachment, add one section of pasta into the roller. Pass through twice on the number 1 setting. Fold each end to meet in the middle, and pass back through the pasta roller on the number 1 setting one more time, and then pass through the numbers 2, 3, 4, and 5, one time each.
  • Continue with the other 3 pasta sections until you have 4 long sheets of pasta.
  • Using a pastry cutter or sharp knife, cut the sheets in half (they are more manageable this way). Flour both sides of all 8 sheets.
  • Pass each sheet through the fettuccine attachment, or use a sharp knife to cut the pasta into thin strips. Twirl the pasta around your hand making small mounds.
  • Bring salted water to a boil, drop your pasta in a few sections at a time to prevent from sticking together. Move pasta around with a wooden spoon and boil for 4 minutes.
  • Remove pasta from water and toss with 2 tablespoons of butter. Plate your pasta.
  • Drizzle with olive oil, grate freshly grated Parmesan cheese, freshly cracked pepper, red pepper flakes, and fresh parsley.

Notes

I use the Pasta Attachment and the Fettuccine Attachment for my KitchenAid Stand Mixer for this recipe. However, you can always use a rolling pin and roll the pasta thinly by hand and use a sharp knife or pastry cutter to cut the pasta into thin strips.
