You know that line from The Holiday where Kate Winslet asks Jack Black “Shall I make us a little Christmas Fettuccine?” Well, have you ever had Christmas Fettuccine? Because it sounds like the perfect simple dish in contrast to all of the heavier foods we typically eat over the holidays… maybe you’ll start a new tradition and enjoy making this homemade pasta dish for you and your family.
Pasta Dough Recipe
- 2 c 00 flour (or all-purpose)
- 3 eggs
- 1/2 tsp salt
- 1 tbsp olive oil
Instructions
01. Add flour to a large bowl, make a well in the center with your hands or with the backside of a measuring cup.
02. Crack your eggs into the well, add salt and olive oil and begin mixing with your hands until all incorporated. Knead for 5-10 minutes by hand. The dough will come together, just stay with it. If the dough still ends up feeling too dry, add water 1 teaspoon at a time until the dough feels soft and smooth.
03. Form into a ball and wrap in plastic wrap and set aside for 30 minutes.
04. Divide the dough into 4 sections.
05. Add flour to a clean surface and begin rolling out each section to 1/4” thickness. Add flour to both sides of the dough to keep from sticking to the pasta roller.
06. Using your pasta roller attachment, add one section of pasta into the roller. Pass through twice on the number 1 setting. Fold each end to meet in the middle, and pass back through the pasta roller on the number 1 setting one more time, and then pass through on numbers 2, 3, 4, and 5, one time each. Don’t forget to change the number setting on your attachment after each pass through.
07. Continue with the other 3 pasta sections until you have 4 long sheets of pasta.
08. Using a pastry cutter or sharp knife, cut the sheets in half (they are more manageable this way). Flour both sides of all 8 sheets.
09. Pass each sheet through the fettuccine attachment, twirl the pasta around your hand making small mounds.
10. Bring salted water to a boil, drop your pasta in a few sections at a time to prevent from sticking together. Move pasta around with a wooden spoon and boil for 4 minutes.
11. Remove pasta from water and toss with 2 tablespoons of butter. Plate your pasta.
12. Drizzle with olive oil, grate freshly grated Parmesan cheese, freshly cracked pepper, red pepper flakes, and fresh parsley.
Did you know that traditional Fettuccine doesn’t include any cream? Even though that is mostly what we are use to… by just using some butter, oil, cheese and fresh herbs, this pasta dish remains simple but still full of so much flavor!
