How is Christmas already two sleeps away?! Festivities start tomorrow morning for us, which is crazy to think about! If you are in a pinch for a simple but thoughtful gift, consider a baked banana bread loaf, linen tea towel and wooden bread board!
I have baked A LOT of banana bread loaves over the last couple of years and this one just might be my best one yet! My Granny use to always make banana bread around the holidays and it was always my favorite… she passed just before Christmas in 2020 and unfortunately, none of us have her recipe since she never wrote it down. I like to think by baking and enjoying a banana bread loaf with my family around Christmas is a way of carrying on her tradition and memory… even as simple as it may be.

Baking Favorites
Banana Bread Loaf
Ingredients
- 3 Ripe Bananas
- 1 Stick of Melted Butter
- 1/2 c Sugar
- 1/2 c Dark Brown Sugar
- 2 Eggs
- 1 tablespoon Vanilla Extract
- 1 1/2 c All-Purpose Flour
- 1 1/2 tsp Baking Soda
- 1 tsp Salt
- 1 tsp Cinnamon
- 1/2 c Mini Chocolate Chips optional
- Crushed Walnuts + 1 tbsp Brown Sugar for topping optional
Instructions
- Preheat oven to 350º
- Cream together sugars and butter
- Add in smashed bananas, 2 eggs, and vanilla extract. Whisk to combine
- In a separate bowl, mix together flour, baking soda, salt, and cinnamon
- Pour dry ingredients into wet, stir with a wooden spoon until just combined- Do not over mix
- If using, stir in chocolate chips
- Line a loaf pan with parchment paper and pour in batter
- Top with crushed walnuts and sprinkle brown sugar overtop
- Bake for 55 minutes or until toothpick come
- Let cool 10 minutes before removing from the pan and slicing
